Kick off Paso Robles Wine Fest weekend the way it deserves to start—glass in hand, surrounded by good food, great people, and the kind of wines that make you smile.
Join Varinder and Anita Sahi at the beautiful Allegretto Vineyard Resort in Paso Robles for an intimate, collaborative five-course winemaker dinner. Together, they’ll guide you through a thoughtfully crafted menu designed to spotlight the nuance, texture, and layered complexity of five Copia Vineyards wines.
The evening opens with a welcoming reception of small bites, your first pour and conversation, then flows into a seated, coursed dining experience with thoughtfully paired Copia wines. Between courses, linger, laugh, and connect with fellow wine lovers—and with the Sahis—as the night unfolds over an unforgettable menu and a special lineup of Copia bottlings.

An unforgettable evening of wine, food, and purpose in Paso Robles.
Join Varinder and Anita Sahi, along with the winemaking couples behind Royal Nonesuch Winery and Ciento Cellars, for Vines that ECHO — an exclusive evening at Copia Vineyards Adelaida Estate Winery on Friday, June 5, from 5:00 PM to 9:00 PM.
Guests will enjoy a beautifully curated four-course dinner by Chef Rachel Ponce, paired with exceptional wines from Copia, Royal Nonesuch, and Ciento Cellars. The evening will also feature a live auction with unforgettable experiences and special items.
More than a remarkable night out, this event supports a powerful cause.
Proceeds will directly benefit ECHO’s Building Hope & Home Campaign, helping fund a new family wing that will add 30 additional beds for families with children.
