We did a tasting and food pairing at our visit. It was intimate and the staff made us feel very welcome and special. They shared about the wines, made conversation and it wasn’t the same regurgitated spiel that you sometimes get at other places. You do need a reservation for this, but that is because they personalize your visit. It was smaller, but we loved the quaintness of it. All the staff were friendly. And most importantly, the wine is fantastic! It is very obvious that they take great care in all the details from their wine making to their guest experience. I highly recommend getting a reservation and visiting!

Anita, Varinder and their staff truly understand hospitality and have always made us feel welcome and appreciated. On top of that, Copia produces some of the finest Rhone blends in the Paso area. Highly recommend!

We didn't get to taste the wine as it was closed. Though, the lady was nice enough to direct us to a wine tasting in town that was open. She even rang the owners of the neighbouring winery. She was so great that we want to go back and try their wines!

Absolutely must visit Copia winery was highly recommended to us by someone we met at a restaurant. Despite the expectations, we were blown away. It was by far the best winery experience we have had, compared to Napa or Walla Walla. The set up is very intimate, the setting is beautiful, the wines are excellent, and the hosts are warm and welcoming. We were fortunate that the winemakers and owners (Varinder and Anita Sahi) were around so we got to really learn about the back story of the wine. The visit to Copia and the wine tasting there was the highlight of our trip to Paso Robles. We also bought many bottles of a few different wines. This should be a must-do on your trip to Paso Robles.

We were helped by Alex, the cellar master, who went above and beyond, sharing his extensive knowledge and passion for winemaking in a way that truly enriched our visit. I did the food and wine pairing and had an excellent experience! The food matched well with the wine and had unique flavors , in the best way, that I wasn't expecting. Victoria was our guide for the experience and she did a fabulous job of telling the backstory of the wines and guiding us through the whole experience. I enjoyed all the wines but I left with bottles of The Cure and The Matador. I would highly recommend!

Great small winery. The tasting room and patio are beautiful setting to enjoy a tasting. The tasting itself was very well-done, the staff is knowledgeable about the wine. The wine is also great and not too high of a price point. Highly recommend visiting!

We very much enjoyed our first visit to Copia. We are locals and they were able to accommodate 5 us at the last minute on a Sunday afternoon. Our wine steward, Victoria, was extremely friendly and knowledgable. The wines were delicious. The owners, Anita and Varinder, were very welcoming and both spent time talking to us about their history and wines. We will definitely come back and bring more of our local friends.

Absolutely amazing wines! Beautiful tasting room. Attended the member pick up party in October and I have to say it was one of the best I have ever attended. Had delicious foods to pair with the wines being released. Definitely give Copia a stop on your trip to the Paso region! You won’t regret it! ✨COPIA✨ We toured Paso for a few days and we heard "try COPIA" more than a few times. "COPIA" was in the air. I'd never heard of the winery and I'm so glad I did! On the way out of town we dropped in and they took us without reservation. Within minutes - Anita (one of the owners) began to serve us. We were impressed from the first sip. Impressed with both the wines-and with Anita. Seriously - WOW! I walked out with some of the best reds I bought on the trip and my friend joined yet another wine club (even though he said "no more wine clubs!"). He joined because he was so taken with the great wines and Anita's passion! As I write this we are enjoying a 2018 bottle of "The Story" now with dinner and it is delicious. We are glad to have found COPIA. We are fans. We will be back.

We couldn’t have chosen a better place to celebrate our anniversary. From the moment we walked in, we were greeted by Jennifer, whose warmth and hospitality made us feel right at home. The decor was absolutely stunning — inviting and elegant, with every little detail thoughtfully arranged. The wine was nothing short of impeccable, each pour more delightful than the last. The wines perfectly showcased the region’s unique terroir, with deep, complex flavors that truly made each sip memorable. What truly touched us, though, was the handwritten note they had prepared to acknowledge our wedding anniversary — a personal touch that made the experience even more special. This winery went above and beyond, and we will definitely be back. Thank you again Jennifer for making our experience so memorable!

The wine and food pairing experience was 10/10!

What a great gem we discovered last Fall. We meet the owners and they gave us a tour. Genuinely sweet and wonderful people with a passion for their wine. Monica helped us out and we were lucky to get her again this last visit. Everyone of their wines are delicious and have great stories behind them. Of course, we had to become club members!

Love the “new” tasting room in the Adelaide area. Very peaceful vibe, clean decor, and welcoming hosts. Looking forward to seeing it once all the foliage and vines come in more. We’ll be back again - love your wines too!

Victor was amazing, as always. We loved the food pairings, too! A special accommodation was made for two of us who are vegetarian. Chef Rachel did an amazing job pairing such unique food bites with such amazing wines!

I have been a member of Copia for several years now and this was my first visit to the tasting room at the vineyards. Each visit is exceptional. Victor hosted us throughout our wine and culinary pairing and was genuinely helpful and friendly. He took us on a tour of the garden, which enhanced our experience and helped us appreciate the culinary pairing even more. We went to a larger winery afterwards and did not have a good experience. Nothing tops Copia's welcoming atmosphere.

I don't think there's a better wine experience in Paso than visiting Copia. The wines are stunning, the people warm and kind, and the story is captivating. A favorite of mine.

The hospitality was so warm and welcoming. I felt at home, but better! The wines were seriously outstanding, and the food pairings were spot on. I can't wait to go back and to show all the people I love and that love great wine what a phenomenal job Copia is doing.

I had the most wonderful wine tasting experience at Copia. While Copia is a newer producer in Paso, the wines are incredible! We enjoyed the food pairing which offered a more cohesive tasting experience. The owners, Anita and Varinder, were gracious enough to stop by our table and say hello. They could not have been nicer and really made for a memorable day.

While in Paso we visited several wineries and of all of them the wines and the experience at Copia stood out at the top. The tasting menu was excellent and our hostess made us feel so welcome. Our only regret came at the end when we tried to sign up for the wine club and order their lovely wine, they don't ship to our state of South Carolina or our family’s state of Connecticut. So, by all means go to Copia! But be prepared to bring what you want home with you that day. Perhaps next time we’ll be bette rprepared with a few pieces of checked luggage.

We had a group of 6 that visited on February 22 for the Wine Flight & Culinary Pairing. Everything was set and ready to go when we arrived. The wine and food pairings were excellent, and our host was even more so. Very knowledgeable about the winery and Paso region in generally. The tasting room has a beautiful indoor space and a lovely outdoor patio area. Wines were exceptional. Thank you for the awesome afternoon.

We've been big fans of Copia ever since we visited their tasting room in downtown Paso a few years ago. On our last visit, a couple of weeks ago, we had another great tasting experience and even had the good fortune of meeting Varinder during our visit - he was great! Small boutique winery where you can sit under a vast covered patio, relax, and enjoy the view of the newly planted vineyard while sampling white & red varietals. Our wine educator was friendly and shared stories of the owners love of cooking & wine. The 2021 wines were young & we felt needed more time to age but we were given a sampling of their 2022 that were absolutely delicious & smooth.
