Copia Vineyards & Winery
Copia Vineyards & Winery, founded by Anita and Varinder Sahi, embraces a glass-half-full philosophy rooted in the Latin word for “abundance.” Stemming from 13 generations of farmers in Punjab, India, the Sahis’ love of the land is evident in their credo: “Great wine tastes like it comes from someplace.” After global travels and a passion for fine wine and dining, they found their ideal vineyard in Paso Robles’ Willow Creek District in 2017, planting Rhône and Bordeaux varieties on 50 acres of limestone-rich soil. Alta Colina

Established in 2003 by Bob and Lynn Tillman, Alta Colina is a family-owned estate winery in Paso Robles’ Adelaida District dedicated to producing Rhône-style wines. Situated on 130-acre property with 31 acres of vineyards planted at elevations reaching 1,800 feet above sea level, the winery benefits from steep, shale-laden soils and a climate influenced by the Pacific Ocean. The vineyards’ high elevation and exposure allow even the latest-ripening varieties like Mourvèdre to fully mature while maintaining balance and acidity thanks to influences coming in from the coast. Committed to sustainable practices, Alta Colina transitioned to organic farming in 2012 and continues to craft premium wines with as little intervention as possible. McPrice Myers Winery, founded by self-taught winemaker McPrice “Mac” Myers, is known for crafting bold, expressive Rhône-style wines highlighting the best expressions of Paso Robles terroir. Although this area doesn’t receive as much coastal influence, the vineyards thrive under long, sun-soaked days and benefit from dramatic temperature swings between day and night. The soils here are diverse with a mix of clay, gravel, and sandy loams that have good drainage and allow the vines to dig deep, resulting in wines with incredible flavor intensity. Cass Winery

Cass Winery was founded in 2000 by Steve Cass after he and his wife, Alice, decided to leave behind their fast-paced careers and embrace a new chapter in Paso Robles. Inspired by a trip to South Africa, Steve partnered with builder Ted Plemons to start the winery, blending the beauty of the region with the style and ambiance of South African tasting rooms. With 145 acres of land and twelve varietals planted, Cass Winery’s first vintage was produced in 2003, and the tasting room officially opened in 2005.
