With vineyard-draped hills, winding canyons, and calcareous limestone soils, westside Paso Robles produces wines with incredible depth and natural elegance. The Templeton Gap in the Santa Lucia Mountains brings in cool afternoon breezes and morning fog, which help preserve acidity and aromatic complexity in wines we admire. Copia Vineyards & Winery 

Copia Vineyards & Winery, founded by Anita and Varinder Sahi, embraces a glass-half-full philosophy rooted in the Latin word for “abundance.” Stemming from 13 generations of farmers in Punjab, India, the Sahis’ love of the land is evident in their credo: “Great wine tastes like it comes from someplace.” After global travels and a passion for fine wine and dining, they found their ideal vineyard in Paso Robles’ Willow Creek District in 2017, planting Rhône and Bordeaux varieties on 50 acres of limestone-rich soil. In 2022, their estate expanded to the Adelaida District, further enhancing the winery’s commitment to producing site-driven, opulent wines reflective of the beauty of Paso Robles. Founded in 1964 by Dr. Stanley Hoffman, Adelaida Vineyards & Winery began with the planting of Pinot Noir, Chardonnay, and Cabernet Sauvignon in the region’s calcareous soil. The Van Steenwyk family took stewardship of the property in 1970, continuing the focus on sustainable and organic viticulture. Alta Colina

Established in 2003 by Bob and Lynn Tillman, Alta Colina is a family-owned estate winery in Paso Robles’ Adelaida District dedicated to producing Rhône-style wines. Situated on 130-acre property with 31 acres of vineyards planted at elevations reaching 1,800 feet above sea level, the winery benefits from steep, shale-laden soils and a climate influenced by the Pacific Ocean. The vineyards’ high elevation and exposure allow even the latest-ripening varieties like Mourvèdre to fully mature while maintaining balance and acidity thanks to influences coming in from the coast. Committed to sustainable practices, Alta Colina transitioned to organic farming in 2012 and continues to craft premium wines with as little intervention as possible. • Taste Behind the Cellar Door: Go behind the scenes with a private, focused tasting of current releases amidst barrels of aging wines. This 50-minutes session accommodates up to 6 people and requires reservations. 

McPrice Myers

McPrice Myers Winery, founded by self-taught winemaker McPrice “Mac” Myers, is known for crafting bold, expressive Rhône-style wines highlighting the best expressions of Paso Robles terroir. With a hands-on approach and commitment to sustainability backed by tenacity, Mac and his team farm organically, blending tradition with innovation to produce wines with a distinctively bold style. Partnering with co-owner Venus Lai in 2015, McPrice Myers continued to expand its estate with the winery’s current 84-acre Adelaida District property and will enhance the guest experience with a new hospitality venue set to open in 2025. Daou Vineyards

George and Daniel Daou turned adversity into opportunity, driven by a vision to create world-class wines inspired by their roots in Bordeaux where they relocated after war forced them to leave home and rebuild a life in France. After an extensive search, they found the perfect terroir in Paso Robles, a limestone-rich mountain others had overlooked, and transformed it into one of the region’s most prestigious estates. Today, Daou produces some of Paso Robles’ most acclaimed wines with their Soul of a Lion wine standing as a testament to their relentless pursuit of excellence.

Founded by Eric and Lisa Jensen in 2001, Booker was originally established with the intent to grow the highest quality fruit for top producers in the region, such as Saxum and L’Aventure. Today, Booker is dedicated to producing its own exceptional estate wines representative of the westside Paso Robles’ terroir. L’Aventure was established in 1998 by Stephan Asseo after he left Bordeaux in search of a place that would allow for more freedom in viticulture and winemaking. He found the perfect site in westside Paso Robles where steep hills, complex soils, and ideal drainage provide a foundation for producing remarkable wines. With a philosophy blending French traditions with Californian terroir, L’Aventure is dedicated to producing wines that authentically express each vintage. Today, the winery remains a family operation with Stephan’s daughter Chloé managing the estate. Their commitment to quality and innovation continues to drive the winery’s success.

We also love exploring the eastside of paso Robles, where the warmer, drier climate creates ideal conditions for producing rich wines. Although this area doesn’t receive as much coastal influence, the vineyards thrive under long, sun-soaked days and benefit from dramatic temperature swings between day and night. The soils here are diverse with a mix of clay, gravel, and sandy loams that have good drainage and allow the vines to dig deep, resulting in wines with incredible flavor intensity. Cass Winery

Cass Winery was founded in 2000 by Steve Cass after he and his wife, Alice, decided to leave behind their fast-paced careers and embrace a new chapter in Paso Robles. Inspired by a trip to South Africa, Steve partnered with builder Ted Plemons to start the winery, blending the beauty of the region with the style and ambiance of South African tasting rooms. With 145 acres of land and twelve varietals planted, Cass Winery’s first vintage was produced in 2003, and the tasting room officially opened in 2005. Today, Cass Winery is known for its 100% estate grown wines from certified ENTAV vines, which means they’re certified by the French Institute of Viticulture as authentic clones that primarily come from old growth vines. Benom Winery is the vision of French brothers Arnaud and Guillaume Fabre, who brought their winemaking heritage to Paso Robles.
